Wash & scrub 5 sweet potatoes. Pierce them with a fork and microwave on high until they’re soft, about 8-10 minutes. While the potatoes are cooking, preheat your oven to 400.
Cut the potatoes lengthwise, scoop out the flesh, and place in a large bowl. Add 1/4 cup sugar, 2 tbs. cinnamon, 2 tbs. extra-light olive oil (you can substitute canola oil—just don’t use regular olive oil because the taste will be too strong), 2/3 cup maple syrup, and 3/4 cup orange juice. Stir in 4 cups quick-cooking oats and mix well.
Lightly grease a 9″ x 13″ baking pan. Pour mixture evenly into pan. Bake 20-25 minutes. Let cool 10 minutes. Cut into bars.
